An Irish person will consume about 26 kilos of poultry each year and with a 9% rise in the industry in 2014, chicken seems set to be making an appearance on our dinner plates for years to come!

That is why we created the ‘One Chicken, Five Recipes’ course; to get the most from out of this popular ingredient and give you the skills to create five delicious recipes that the whole family will enjoy!
The course will be led by award winning chef Neil McEvoy, former head-chef at Dunbrody Country House Hotel where he presented several classes in the cookery school.
Neil will demonstrate how to get the most from your free-range chicken using the legs, wings and breast to create healthy and wholesome family meals!
Then you will learn the techniques and skills needed to whip up a chicken liver parfait that will really impress your dinner guests. Finally Neil will uncover the secret to making authentic home-made chicken stock for soups or risotto and a good base for any stew or casserole. Perfect for the freezer, your chicken stock can be frozen in a covered ice-cube tray to add depth to many dinners to come!
